These are the easiest and tastiest crackers I’ve ever made. The fact that I bake a new batch every week or two says it all. If you’re regularly maintaining a sourdough starter, I’m sure you’re going to love this recipe.

  • Easy to make: Simply stir together a handful of ingredients, spread the mixture onto a baking sheet, and let the oven do the work.
  • Endless flavor options: My favorite combination is rosemary, thyme, and flaky sea salt, but you can season these crackers however you like. I’ll share a few ideas below.
  • A no-waste recipe: Especially when you’re just starting with sourdough, you’ll often have extra starter after feedings. You can try to minimize discard, or you can put it to good use in delicious recipes like this.

What Is Sourdough Discard?

“Discard” is simply the portion of your sourdough starter that you remove before feeding it.

You can throw it away, but I’d much rather use it in sourdough discard recipes.

When you’re first establishing a starter, you’ll have quite a bit of discard. During the first few days, it isn’t suitable for much, but after several days it becomes perfect for recipes like these crackers.

Discard works especially well in recipes that don’t rely heavily on rising, making it ideal for crackers.

Ingredients for Sourdough Crackers

These crackers require only a few simple ingredients. Technically, the discard alone is enough, but I find that adding olive oil and a generous pinch of salt makes the crackers much more flavorful and gives them a better texture.

  • sourdough discard – the portion of your homemade sourdough starter that you would normally discard during feeding
  • olive oil – use a good-quality extra virgin olive oil that you enjoy, since its flavor will come through in the finished crackers
  • salt – regular table salt works perfectly in the batter
  • thyme and rosemary – I use dried herbs, but you can easily experiment with other seasonings
  • flaky sea salt – sprinkle this over the batter before baking for an extra burst of flavor

Flavor Variations

One of the best things about this recipe is how easy it is to customize. Simply swap the herbs or add different toppings.

Here are two of my favorite variations, both shown in the photos:

  • Stir 50 grams (about ½ cup) of shredded cheese into the batter before spreading it out.
  • Sprinkle the crackers with a mixture of pumpkin seeds and sunflower seeds before baking. Add as many as you like.

Storing Sourdough Crackers

These homemade crackers stay fresh surprisingly well, although they tend to disappear quickly in my house.

How long do sourdough crackers stay fresh?

Stored in an airtight container, they’ll keep for at least 2 months. If you add other ingredients, the shelf life may vary slightly.

Can you freeze sourdough crackers?

Absolutely. Store them in an airtight container or freezer bag for up to 3 months. Since they already last such a long time at room temperature, I rarely freeze them myself.

FAQ Sourdough Discard Crackers

Why are your crackers darker than mine?

I use a combination of whole rye flour and rye flour in my sourdough starter. The higher fiber content produces darker crackers than a starter made with white wheat flour.

Why did some of my crackers burn?

Spreading the batter evenly is essential. Aim for a thickness of about ⅛ inch (3 mm) across the entire baking sheet. I like using an offset spatula because it makes spreading much easier.

I have more or less discard than the recipe calls for. What should I do?

Feel free to scale the recipe to match however much discard you have. Since the batter is spread thinly across a baking sheet, the exact amount isn’t critical. Just keep the thickness around ⅛ inch (3 mm).

I usually have about 350 grams of discard when making these crackers, which is what this recipe is based on. If you use significantly more or less, the baking time may vary slightly.

Can I leave out the olive oil?

Yes, although the texture and flavor will be a bit different. You can also substitute with melted butter.

Should I use active or inactive discard?

Either works well. The activity level has very little effect on this recipe. Inactive discard actually gives the crackers a slightly tangier, more traditional sourdough flavor.

How long can I keep sourdough discard?

Store your discard in an airtight container in the refrigerator for 1 to 2 weeks for the best flavor.

Be sure your container is large enough. Even in the refrigerator, discard can continue to rise and may push the lid off if there’s not enough room.

Why aren't my crackers crispy?

They probably need more baking time, or the batter was spread too thickly or unevenly. Keep the layer around ⅛ inch (3 mm) thick and bake until the crackers are almost completely crisp.

If a few pieces are still slightly soft, they’ll often crisp up as they cool. If some remain soft after cooling, simply bake them for a few more minutes.

If you regularly make sourdough bread you’re likely to have some discard leftover. This is the perfect recipe to use up your discard!

Ingredients 

  • 350 grams sourdough discard
  • 35 grams olive oil
  • Pinch of salt
  • 2 tsp dried rosemary
  • 2 tsp dried thyme
  • Flaky sea salt
  • Shredded cheese seeds, and/or nuts (optional)

Instructions

  • Combine the sourdough discard, olive oil, salt, rosemary, and thyme in a bowl and stir until smooth.
  • Line a baking sheet with parchment paper and pour the batter onto it.
  • Using a spatula, spread the batter evenly over the baking sheet until it’s about ⅛ inch (3 mm) thick.
  • Sprinkle the top with flaky sea salt.
  • Bake for 10 minutes at 320°F /160°C (conventional oven).
  • Remove the pan from the oven and cut the crackers into your desired size with a sharp knife. Mine are usually about 1½ × 3 inches (4 × 8 cm).
  • Return the pan to the oven and bake for another 35-40 minutes, until the crackers are golden brown and crisp. Keep an eye on them, as baking times can vary by oven.
  • Let the crackers cool completely on the baking sheet.
Tips

For cheese crackers, stir 50 grams (about ½ cup) of shredded cheese into the batter before spreading it out. If using seeds or nuts, sprinkle them over the batter before baking.
How to store

Store the crackers in an airtight container at room temperature for at least 2 months. They can also be frozen for up to 3 months.
