Goat Cheese Stuffed Mushrooms Wrapped in Bacon

Looking for a quick, crowd-pleasing appetizer or snack that’s anything but ordinary? These mushrooms stuffed with goat cheese and wrapped in bacon use just three ingredients and come together in minutes.

Crowd-Pleasing Appetizer

Even if you’re not a huge fan of mushrooms, these soft cheese stuffed mushrooms just might win you over. They certainly did for me!

  • Perfect flavor pairing – the tangy goat cheese pairs beautifully with the mild savory mushrooms and salty bacon that’s truly irresistible
  • They come together in just a few minutes!
  • With only three ingredients, this appetizer is as budget-friendly as it is simple
  • Great for all occasions – enjoy these bacon wrapped mushrooms as a sophisticated holiday appetizer or a casual snack with friends and family

Recipe Ingredients

Are your eyes playing tricks on you? They’re not! These scrumptious, bite sized appetizers come together with just three ingredients. Find all the details in the recipe card below.

  • white mushrooms – remove the stems. You can carefully hollow out the mushroom caps a little extra if you want to put more cheese filling in them
  • soft goat cheese – feel free to use another soft cheese, such as blue cheese or cream cheese. Both of these alternatives work really well with this recipe
  • bacon slices – don’t use very thick-cut bacon as the balance will be lost. I like to use thin strips and sometimes cut the slices of bacon to the right size

How To Make Bacon Wrapped Stuffed Mushrooms

Start by cleaning the mushrooms and removing the stems. You can scoop out the caps slightly so you can fit more goat cheese inside, if you like.

CLEANING TIP: Avoid washing mushrooms under the tap, as they absorb a lot of water and lose their flavor. It’s best to use a mushroom brush to clean them instead.

Next, fill each mushroom cap generously with the soft goat cheese and wrap a slice of bacon around each one.

Place the stuffed and wrapped mushrooms in a baking dish that’s been lightly greased with olive oil, and bake for 25 minutes at 350°F/180°C (conventional oven).

These are best enjoyed straight away!

Storing Goat Cheese Stuffed Mushrooms Wrapped in Bacon

I haven’t tried cooking the mushrooms a day ahead and reheating them, but you can definitely prepare the filling in advance. Simply stuff the mushrooms the next day and bake them so they’re ready to serve fresh from the oven.

Can you freeze these goat cheese stuffed mushrooms?

It’s possible to freeze goat cheese stuffed mushrooms wrapped in bacon, but the mushrooms can absorb moisture which will affect their texture.

To freeze these assembled mushrooms, arrange them unbaked on a baking sheet until firm, then transfer to a freezer bag. They will last for up to 3 months in the freezer. Bake them directly from frozen, adding a few extra minutes to the cooking time.

More Party Snacks

While I’m not the biggest fan of mushrooms, I love how quick and easy these snacks were to assemble, much like these appetizer recipes below:

FAQ Goat Cheese Stuffed Mushrooms Wrapped in Bacon

What type of mushrooms are best?

I prefer regular white button mushrooms or cremini for stuffed mushrooms. When selecting them, look for mushrooms that are roughly the same size to ensure even cooking. White mushrooms have a mild flavor, which pairs perfectly with the soft goat cheese filling and salty bacon.

Should I discard the mushroom stems?

You can, but you can also keep them to incorporate into a main meal the next day.

Can I make these bacon wrapped mushroom vegetarian?

Absolutely! Omit the sliced bacon and mix in some chopped herbs, spices, or crispy fried shallots into the soft goat cheese filling for a boost of flavor and texture.

How do I keep the bacon slices in place?

Simply secure each wrapped mushroom with a toothpick before baking. This prevents the bacon from unraveling and makes flipping or handling them much easier. Make sure to remove the toothpicks before serving.
