As most of you probably know, I love putting together a good spread of appetizers and that includes delicious salads to go with it. This cucumber salad with yogurt is definitely one of my favorites. It’s flavorful, fresh, and comes together in no time. Perfect!

My favorite Cucumber Salad

This easy cucumber salad is fresh and light due to the combination of cucumber and Greek yogurt. It’s perfect for entertaining, super customizable and pairs with just about everything and anything.

I like to serve it at a barbecue, potluck and many more occasions.

Recipe Ingredients

You only need a few simple ingredients to make this delicious salad.

  • cucumber – I use about 1 regular size cucumber
  • Greek yogurt – I prefer to use a full fat yogurt for the best flavor (10% fat content)
  • mayonnaise – to add creaminess, I love mixing yogurt with mayonnaise
  • lemon juice – I use the juice, but you can also add a bit of zest for even more freshness
  • dill – dill is a classic ingredient in a cucumber salad, but you can also replace it with fresh parsley if you prefer. Basil is also a great addition
  • garlic – garlic can be quite strong when used raw, so add whatever you feel comfortable with. I used 1 large clove. Also, keep in mind that garlic gets stronger if you let the cucumber salad sit for longer

How To Make Cucumber Salad

To make this cucumber salad, start by removing the seeds. While this is optional, keep in mind that the seeds contain quite a bit of liquid and it’s for this reason that I tend to remove it. Cut it lengthwise in two and scrape the seeds out. This is easy to do with a spoon.

Now slice the cucumber in thin slices. This works best with a mandoline, but a sharp knife will work too. You can also grate the cucumber but that would mean extra moisture as well. If necessary, drain the cucumber first.

Add all ingredients to a bowl and mix well. This cucumber salad is best served right away.

Storing Cucumber Salad

You can store the cucumber salad in an airtight container in the fridge for up to a week.

Keep in mind that letting it sit will release extra moisture from the cucumber. You can simply drain it, if necessary, or give it a quick stir. I do like it best when served fresh.

Can you freeze cucumber salad?

No, freezing is not recommended for this salad.
