Cucumber Salad

A fresh and flavorful cucumber salad, perfect for appetizers or as a side dish. Easy to make and delicious!

Servings: 2 cups

Ingredients 

  • 1 cucumber
  • 100 grams Greek yogurt 10% fat preferred
  • 3 tbsp mayonnaise
  • 2 tbsp lemon juice
  • 2 tbsp fresh dill
  • 1-2 cloves garlic
  • Salt and pepper to taste

Instructions

  • Cut the cucumber in half lengthwise and remove the seeds.
  • Slice or shave the cucumber into thin slices. A mandoline works best, but a cheese slicer or knife will also do.
  • Add all ingredients to a bowl and mix well. Serve immediately.
How to store
Store in an airtight container in the refrigerator for up to one week. Freezing is not recommended.
