I’ve always enjoyed using my favorite candies as baking inspiration, and you can see that in recipes like my Toblerone Cheesecake, Ferrero Rocher Cupcakes, and Easy Homemade Twix Bars.

So it’s no surprise I had to try Ferrero Rocher brownies. They’re an easy, ultra-indulgent twist on regular brownies, perfect for those special occasions!

Recipe Ingredients

Sugar, flour, butter, eggs, and cocoa are the usual suspects for fudgy brownies, but this Ferrero Rocher version packs unforgettable extras you simply can’t skip! Make sure to check out the recipe card below for full details:

  • sugars – I’ve used a combination of fine granulated sugar and dark brown caster sugar in the brownie batter which contributes to the chewy, fudgy center and crisp outer edges
  • dark chocolate – provides rich chocolate flavor to the brownies in addition to the cocoa and chocolate chips
  • syrup – adds to the dense, moist texture, and rich flavor
  • eggs – bring to room temperature before beating
  • vanilla extract – adds depth of flavor to these Ferrero Rocher brownies
  • flour – all purpose flour is a sturdy flour for brownie batter
  • cocoa – Dutch processed cocoa is rich with smooth flavor, although you can use regular cocoa too
  • baking powder – for just the right amount of rise
  • mix-ins – chopped hazelnuts and milk chocolate chips are folded into the batter just before pouring the batter into the baking pan. Hazelnuts are what are used in Ferrero Rocher chocolates which makes them an ideal choice for these brownies, but you could use other varieties of nuts if you prefer
  • chocolate topping – combine softened cream cheese with Nutella to spread over the baked and cooled brownies.
  • decoration – for a classic ‘Ferrero Rocher’ finish, sprinkle finely chopped hazelnuts and Ferrero Rocher pieces over the Nutella topping while still slightly tacky so that it sticks.

BAKING TIP: Make sure that the brownies have cooled completely before adding the chocolate Nutella topping, or it will make the topping runny.

Storing Ferrero Rocher Brownies

Without the topping, store the brownies covered in a dark, cool place for about 3-5 days. Alternatively, leftover Ferrero Rocher brownies with the cream cheese Nutella topping can be stored in an airtight container in the fridge for 2-3 days.

Can I freeze these brownies?

Absolutely! You can also freeze these brownies without the topping for up to 2 months. Thaw overnight in the fridge and decorate with freshly made topping, chopped hazelnuts, and Ferrero Rocher pieces just before serving.

What is the best size baking pan for brownies?

Just like my Cakey Brownies, I’ve used an 8×8 inch/20×20 cm square baking pan for this Ferrero Rocher-inspired brownie recipe. It creates the perfect size brownies and the right doneness with the baking time in the recipe below.

How do I know when these brownies are done?

Unlike regular cake, you can’t rely on a cake tester with brownies. Instead, use your eyes. The top of the brownie should be dry, and when you shake the pan a little, it should stop wiggling. If it does wiggle, the brownie batter should bake for an extra minute or two.

How do I cool the brownies faster if I'm in a rush?

Don’t attempt to top these brownies with the Nutella topping while the brownies are still hot or warm and the residual heat with thin the consistency of the topping. If you’re in a rush, place the pan of baked brownie batter in a bowl of cold water. The pan will cool down immediately, so the brownie base will also cool down faster.

Why use melted chocolate and cocoa powder in the brownie mixture?

My brownie recipes always include both melted chocolate and cocoa powder. The melted chocolate adds flavor and texture, and the addition of cocoa powder makes chocolate brownies even more intense. The combination is perfect!

Ferrero Rocher Brownies

If you’re a fan of Ferrero Rocher, you’re going to love these brownies. They’re loaded with extra chocolate, creamy Nutella, and plenty of hazelnuts. Everything you crave in one decadent bite!

Ingredients 

For the brownies

  • 60 grams unsalted butter
  • 150 grams granulated sugar
  • 75 grams dark brown sugar
  • 125 grams dark chocolate
  • 1 tbsp syrup golden syrup or corn syrup
  • 2 eggs
  • 1 tsp vanilla extract
  • 100 grams all-purpose flour
  • 20 grams cocoa powder
  • 1 tsp baking powder
  • 75 grams chopped hazelnuts
  • 75 grams milk chocolate chips

For the topping

  • 200 grams cream cheese such as Philadelphia
  • 150 grams Nutella
  • Handful of finely chopped hazelnuts
  • 16 pcs Ferrero Rocher chocolates for decorating

Instructions

  • Add the butter, both sugars, dark chocolate, and syrup to a saucepan over low heat. Stir until the butter and chocolate have melted, then remove from the heat. The sugar does not need to fully dissolve and may still be visible. Let the mixture cool until it reaches room temperature or is slightly warm.
  • Meanwhile, beat the eggs and vanilla extract until light and fluffy. Add the cooled chocolate mixture and mix on low speed until smooth.
  • Add the flour, cocoa powder, and baking powder. Mix again on low speed just until combined. Do not overmix.
  • Fold the chopped hazelnuts and chocolate chips into the batter.
  • Pour the batter into a parchment-lined 8×8-inch/ 20×20 cm baking pan and spread evenly. Bake the brownies for 25 minutes at 375°F/190 °C (conventional oven).
  • The top should look set after baking, but the inside may still be slightly soft and fudgy. Let the brownies cool completely before adding the topping.
  • Make the Nutella topping
  • Mix the cream cheese and Nutella together until smooth. There is no need to overmix.
  • Spread the topping over the cooled brownies and decorate with chopped hazelnuts and Ferrero Rocher chocolates.
Tips

Allow the melted chocolate mixture to cool down before adding to the beaten eggs. Make sure the brownies have cooled completely before adding the topping.
How to store

Without the topping, the brownies will keep for 3-5 days in an airtight container in a cool, dark place. You can also freeze the brownies without the topping.
