This homemade marble cake is surprisingly easy to make and perfect for serving with fresh fruit and a dollop of whipped cream.

What is Marble Cake?

Marble cake is a classic loaf cake made by swirling together vanilla and chocolate cake batter before baking. The result is the signature marbled pattern that gives the cake its name.

Although marble cake is enjoyed all over the world, every family seems to have their own favorite version. Some recipes use melted chocolate, while others rely on cocoa powder for the chocolate swirl. This easy recipe keeps things simple while creating a soft, buttery cake with beautiful chocolate ribbons running through every slice.

How To Bake Marble Loaf Cake

Making this beautiful marble loaf cake is not very difficult if you follow the steps below. You start by adding the butter (at room temperature) and the sugar together and mix it until light and creamy. Beat the eggs into the mix one by one and add the vanilla extract.

Transfer two-thirds of the batter into another bowl.

Mix the cocoa powder together with the milk until you have a smooth mixture. Add this mix into the 1/3 part of the batter. This will be your chocolate portion.

Now spread half of the vanilla cake batter into the prepared loaf pan (brushed with oil or butter and covered with parchment paper). Add the chocolate batter on top in an even layer and finish with the remaining vanilla batter.

Using a knife swirl the two batters gently in the form. The fun part is that you will not know how it looks until you’ve baked the cake.

Bake the cake for about 60 minutes at 175˚C/350˚F (conventional oven) or until a wooden skewer inserted into the middle of the cake comes out clean.

FAQ Marble Loaf Cake

How do I get a nice marble pattern?

After layering the vanilla and chocolate batters in the pan, gently swirl them together with a knife. A few swirls are enough. Mixing too much will blend the batters instead of creating distinct ribbons.

Can I use melted chocolate instead of cocoa powder?

This recipe was developed using cocoa powder. Melted chocolate changes both the texture and consistency of the batter, so I recommend sticking with cocoa powder for the best result.

Why did my marble cake turn out dry?

The most common causes are overbaking or adding too much flour. Measure carefully and check the cake for doneness around the 55-minute mark.
