Make cheesecake when you have enough time to plan ahead. Most cheesecake recipes need several hours for chilling or cooling, and baked cheesecakes often require overnight refrigeration to set properly.

Tips for making cheesecakes

  • Use room-temperature ingredients. Cream cheese, eggs, and sour cream should be at room temperature to blend smoothly and avoid lumps.
  • Don’t overmix the creamy filling. Overbeating incorporates too much air, which can cause cracks (in baked cheesecakes) or a foamy texture (in no-bake cheesecakes). Mix just until combined.
  • Use a springform pan. This makes removal much easier for both baked and no-bake whole cheesecakes.
  • Press the cookie crust firmly. A tightly packed, even crust prevents crumbling when slicing.
  • Chill thoroughly before serving. Both types of cheesecakes need adequate setting time; overnight is best for clean slices.
  • For baked cheesecake, a water bath is essential. It ensures even, gentle baking and prevents cracks in the cheesecake layer. 
  • Turn off the oven and leave the cheesecake inside with the door slightly ajar for an hour, then cool at room temperature before refrigerating. Sudden temperature changes cause cracking in baked cheesecakes. 
  • Always use full-fat cream cheese in no-bake cheesecake recipes as lower-fat versions contain more water and may not set properly.
