Recipe Ingredients

For making these blueberry rolls I am using my basic sweet dough recipe which is perfect for this. In addition you need the following ingredients:

  • pastry cream – you can find the recipe for making pastry cream here
  • blueberries – I use fresh blueberries
  • powdered sugar – this is used for making the glaze that goes over the top but is optional
  • milk – also used for making the glaze. Can be replaced by lemon juice or water

How To Make Blueberry Rolls

Make the dough for the rolls first. While the dough rises prepare the pastry cream. Once both are complete, assemble by rolling out the dough into a rectangle and spread the pastry cream over the top.

Add the blueberries and roll this up tightly. Using a sharp knife cute the roll into 12 equal sized pieces and add to a greased baking dish. Make sure to leave a little bit of space in between each roll, so they have some room to rise.

Bake the rolls in the preheated oven for about 30 minutes or until golden brown. Take out of the oven and let it cool slightly. Drizzle the glaze over the top and serve them warm with extra blueberries.

Storing Blueberry Rolls

Once the rolls are completely cooled down, wrap them properly and store them outside of the fridge for up to 4 days.

Can you freeze blueberry rolls?

If you want to freeze these blueberry rolls, don’t add the glaze but do that after defrosting. Once frozen they will keep for up to three months.

Can I make these rolls ahead of time?

Blueberry Rolls With Pastry Cream

These delicious sweet rolls filled with pastry cream and blueberries are perfect for breakfast or brunch.

Ingredients 

  • 1 Basic sweet dough basic recipe
  • 250 grams pastry cream prepared according to recipe
  • 100 grams blueberries
  • For the glaze
  • 75 grams powdered sugar
  • 1 tbsp milk
  • Extra blueberries for garnish

Instructions

  • Prepare the dough for the sweet rolls according to the recipe. Do the same for the pastry cream, you can make the cream a day ahead if you like.
  • Roll the dough out into a rectangle and spread it evenly with the pastry cream. Scatter the blueberries over the top and roll it up tightly.
  • Cut the roll into 12 equal pieces and place them in a greased baking dish, leaving a little space between them so they can rise in the oven.
  • Bake in a preheated oven at 350°F (180°C) using conventional heat until cooked through and golden brown, about 30 minutes.
  • Let the rolls cool slightly. Meanwhile, make the glaze by mixing the powdered sugar and milk until smooth. Serve the rolls warm, drizzled with glaze and topped with extra blueberries.
How to store

Once completely cooled, store the rolls well wrapped at room temperature for 3-4 days.
