  • chocolate – both milk chocolate and dark chocolate taste very good for making these clusters. I would only advise against white chocolate. Personally, I prefer using 50% milk chocolate and 50% dark chocolate for my clusters
  • peanuts – I prefer unsalted peanuts for these sweet treats. You could always sprinkle some sea salt flakes on the top, if you like

How To Make Peanut Clusters

Melt two-thirds of the chocolate using a double boiler, then remove it from the heat and stir in the remaining chocolate until completely smooth. You will essentially be tempering the chocolate that way. (Check how to temper chocolate without a candy thermometer here). 

Once the chocolate feels cool to the touch, mix in the peanuts so that they are fully coated.

Spoon the mixture into 20 mounds onto a parchment-lined baking sheet, and leave them to set completely in a cool place before serving.

Storing Peanut Clusters

Store these crunchy peanut clusters outside the fridge in an airtight container for up to at least 2 weeks. 

Can I freeze these chocolate covered peanut clusters?

Absolutely! Place them in a freezer-safe container or bag and store them in the freezer for up to three months. Take them out of the freezer a few hours before use so they can reach room temperature. This way, you can enjoy this treat for even longer!

Will white chocolate work for peanut clusters?

I prefer the combination of peanuts with either milk chocolate or dark chocolate, or a mixture of the two. White chocolate just doesn’t seem to be able to trump that balance of flavors. Whether you use milk chocolate or dark chocolate, make sure it’s a high-quality chocolate as it makes all the difference in flavor and sheen.

How can I vary this peanut cluster recipe?

Add raisins for peanut raisin clusters. For coconut lovers, mix in some shredded coconut to make peanut coconut clusters.

Melt some white chocolate or caramel chips and drizzle that over the set peanut clusters. You could also sprinkle flaky sea salt or sprinkles over the top while the chocolate is still wet.

I don't like peanuts. What other nuts work for this recipe?

You could make these nut clusters with any of your favorite nuts. Almonds and pecans are particularly good (chopped down in size or whole), but you can also try it with macadamia nuts, hazel nuts, or walnuts.

Can I use my microwave to melt the chocolate?

Yes, you can. Place the two-thirds of chopped chocolate (or chocolate chips) in a dry, microwave-safe bowl and heat on 50% power in 30-second bursts, stirring vigorously after each one. When only a few small lumps remain, stop and stir until the residual heat melts them completely. Mix in the rest of the chocolate and continue stirring until everything is melted.

Never let water or steam near the bowl, or the chocolate will seize and turn grainy, and you’ll have to start over with new chocolate.

Ingredients 

  • 200 grams chocolate
  • 175 grams peanuts unsalted

Instructions

  • Place two-thirds of the chocolate in a heatproof bowl and melt it over a double boiler.
  • Once the chocolate has completely melted, remove the bowl from the heat and add the remaining chocolate. Stir until it has fully melted.
  • Let the chocolate cool until it feels cool to the touch. Add the peanuts and stir until they’re evenly coated.
  • Spoon small mounds of the mixture onto a baking sheet lined with parchment paper. Let the chocolate set completely in a cool place.
Tips

Enjoy these peanut clusters with a cup of coffee or tea, or package them in a decorative cellophane bag for a thoughtful homemade gift.
How to store

Store in an airtight container in a cool, dry place for at least 2 weeks.
