Want to make an impressive and delicious dessert without spending hours in the kitchen? This easy Eton Mess recipe comes together in no time and is a classic British dessert that always impresses. It’s simple to make and a guaranteed crowd-pleaser for both kids and adults.

Why Eton Mess Is the Perfect Dessert

This is a fantastic summer dessert, although it’s also often served during the holiday season as part of a Christmas dinner menu. And for good reason: it looks elegant and indulgent while being incredibly easy to prepare.

  • Quick. If your meringues are already baked (or store-bought), this dessert can be on the table in just five minutes.
  • Versatile. Traditional Eton Mess is made with strawberries, but just about any type of berry or red fruit works beautifully.
  • Easy. Not only is the recipe simple, but it doesn’t need to look perfect. As the name suggests, a little mess is exactly what you’re aiming for.

What Is Eton Mess?

Eton Mess is a traditional British dessert made with three simple components: strawberries, whipped cream, and meringue.

The ingredients are layered together in a glass, creating a deliberately messy appearance, hence the name “mess.” The dessert originated at England’s famous Eton College, where it was traditionally served during annual cricket matches.

What’s the Difference Between Eton Mess and Trifle?

While both desserts are British classics that combine fruit and cream, they’re quite different in structure and presentation. A trifle (like this blackberry trifle) is typically made with layers of cake, cream (often mascarpone-based), and fruit. It’s carefully layered in a large glass bowl and has a more polished appearance.

Eton Mess, on the other hand, is meant to look rustic and playful. It uses different ingredients and is usually served in individual dessert glasses rather than one large dish.

How to Make Eton Mess

Eton Mess is a great excuse to bake your own meringues, but it’s also a perfect way to use up leftover meringue cookies. Of course, store-bought meringues work just as well.

And trust me, the combination of crisp meringue and soft whipped cream is absolutely irresistible.

Ingredients You’ll Need

  • strawberries – best to use fresh strawberries when they’re in season, but you can easily substitute them with other berries or red fruits
  • heavy whipping cream – Don’t whip it too stiff; a softly whipped texture works best
  • sugar – Adds just the right amount of sweetness
  • meringues – Add them right before serving to keep them crisp and crunchy

BAKING TIP: For an extra festive presentation, serve your Eton Mess in pretty dessert glasses. Small mason jars work beautifully too.

Storing Eton Mess

This dessert is definitely at its best when served immediately. However, you can prepare the individual components one or even several days ahead of time.

The meringues can be baked one to two weeks in advance, the whipped cream can be prepared the day before and kept covered in the refrigerator, and the strawberry puree can also be made ahead. With those elements ready to go, assembling the dessert takes just minutes.

How Long Does Assembled Eton Mess Keep?

Once assembled, Eton Mess can be stored in the refrigerator for 1-2 days if covered. Keep in mind that the meringues will lose their crunch as they absorb moisture from the cream and fruit.

Can You Freeze Eton Mess?

No, this dessert is not suitable for freezing.

FAQ Making Eton Mess

Can I Make It Without Meringue?

You can, but technically it won’t be Eton Mess anymore. Try replacing the meringue with ladyfingers or another crunchy cookie if you prefer.

Can I Use Different Flavored Meringues?

Absolutely! There are plenty of ways to customize the meringues. Some delicious options include:

What Can I Use Instead of Strawberries?

A mixed berry version is one of my favorites, but passion fruit also makes a delicious variation. Try:

  • Blackberries
  • Raspberries
  • Red currants
  • Blueberries
  • Passion fruit

Can I Use Frozen Fruit?

You can, but frozen fruit tends to release more moisture than fresh fruit, which can affect the crispness of the meringue. It’s not my first choice for flavor and texture, but it does work. Just make sure the fruit is fully thawed and patted dry before using.

Eton Mess Recipe

A quick dessert that doesn’t need to look perfect, that’s exactly what Eton Mess is all about. Simply layer the ingredients together and you’re done!
Preparation15 minutes
Total15 minutes
Servings: 4 people

Ingredients

  • 5 meringues
  • 400 grams strawberries
  • 2 tbsp powdered sugar or granulated sugar
  • 250 ml heavy whipping cream

Equipment

  • Dessert glasses

Instructions

  • Roughly crush the meringues using your hands or a knife.
  • Wash and hull the strawberries, then cut them into small pieces. Take 150 grams of the strawberries and blend them with 1 tablespoon of the powdered sugar until smooth.
  • Whip the heavy cream with the remaining tablespoon of powdered sugar until it reaches soft peaks. It should be somewhere between softly whipped and stiff peaks.
  • Assemble the dessert glasses by alternating layers of crushed meringue, strawberries, whipped cream, and strawberry puree.
  • Finish with a few pieces of fresh strawberry on top.
  • Serve immediately so the meringue stays crisp and crunchy.
Tips

You can easily change up the flavor by using different types of meringues, such as hazelnut meringues, raspberry meringues, or colorful meringue cookies.
How to store

You can prepare all the components separately ahead of time, but assemble the Eton Mess just before serving. Once combined, the meringue will start to soften from the cream and strawberries, so it’s best enjoyed right away.
