Eton Mess Recipe

A quick dessert that doesn’t need to look perfect, that’s exactly what Eton Mess is all about. Simply layer the ingredients together and you're done!

Ingredients 

  • 5 meringues
  • 400 grams strawberries
  • 2 tbsp powdered sugar or granulated sugar
  • 250 ml heavy whipping cream

  • Dessert glasses

Instructions

  • Roughly crush the meringues using your hands or a knife.
  • Wash and hull the strawberries, then cut them into small pieces. Take 150 grams of the strawberries and blend them with 1 tablespoon of the powdered sugar until smooth.
  • Whip the heavy cream with the remaining tablespoon of powdered sugar until it reaches soft peaks. It should be somewhere between softly whipped and stiff peaks.
  • Assemble the dessert glasses by alternating layers of crushed meringue, strawberries, whipped cream, and strawberry puree.
  • Finish with a few pieces of fresh strawberry on top.
  • Serve immediately so the meringue stays crisp and crunchy.
Tips
You can easily change up the flavor by using different types of meringues, such as hazelnut meringues, raspberry meringues, or colorful meringue cookies.
How to store
You can prepare all the components separately ahead of time, but assemble the Eton Mess just before serving. Once combined, the meringue will start to soften from the cream and strawberries, so it’s best enjoyed right away.
