Lemon Meringue Cupcakes

These lemon meringue cupcakes are made with my vanilla cupcake recipe, but I’ve also mixed in some fresh lemon zest for a bright citrus boost. Once cooled, the cupcakes get hallowed out and filled with homemade lemon curd, then finished with a luxurious Italian meringue. It’s everything you love about lemon meringue pie, but in cupcake form!

How To Make Lemon Meringue Cupcakes

It all starts by making the cupcakes, lemon curd, and Italian meringue according to the recipes for these three main components. Once the cupcakes have cooled, use an apple corer to hallow out the centers. If you like, you can snack on those delicious pieces of cake or use them to make a smaller batch of cake balls, like these red velvet cake balls.

With the lemon curd and Italian meringue ready, add them to separate piping bags. I found that a Wilton tip 1M was ideal for piping open rosettes on each cupcake, keeping the hallowed center uncovered. For a special touch, use a kitchen torch to gently brown the edges of the meringue.

Lastly, fill each cupcake with lemon curd. You now have 12 beautiful lemon meringue cupcakes that will impress anyone you serve them to!

Storing Lemon Meringue Cupcakes

Once assembled, these lemon meringue cupcakes can be stored in an airtight container or cake box at room temperature for 2-3 days, although the meringue will start to soften. I don’t recommend storing these lemon meringue cupcakes in the fridge as they tend to dry out.

Can you freeze lemon meringue cupcakes?

Don’t freeze these lemon cupcakes once assembled as the meringue won’t hold up to the freezing and thawing. You can freeze the cupcakes and lemon curd separately as a way to make these elements ahead of time or if you have more than you need.

The cupcakes and lemon curd can be made 1-2 days in advance, but I suggest only filling the cupcakes with lemon curd and topping them with the piped meringue just before serving for best results.

Why is my lemon curd filling leaking out?

It’s important to only insert the apple corer about two-thirds of the way into each cupcake when removing the centers. That way, the lemon curd will not leak out through the bottom.

I don't have a kitchen torch. Now what?

If you don’t have a kitchen torch to create beautiful golden edges to the meringue topping, simply place the lemon cupcakes under the broiler for a short time, keeping a close watch that the meringue doesn’t burn.

Ingredients 

  • 1 recipe vanilla cupcakes add 1 teaspoon lemon zest to the batter
  • 1 recipe lemon curd you’ll have some left over, but there are plenty of delicious ways to use it!
  • 1 recipe Italian meringue half a recipe is more than enough. You can use any leftovers to make classic meringue cookies

Equipment

  • 1 Kitchen torch to finish the meringue. You can also add them briefly under the broiler
  • 1 Apple corer to hollow out a small portion of the center of each cupcake
  • 2 piping bags one for the lemon curd and one for the meringue
  • 1 Muffin tin

Instructions

  • You can easily make the lemon curd a day ahead. Short on time? Start with the lemon curd on the day you’re making the cupcakes, as it needs time to cool completely.
  • Next, bake the cupcakes according to the recipe and allow them to cool completely. While the cupcakes are cooling, you can prepare the Italian meringue.
  • Once the cupcakes have cooled, hollow out a small portion of the center. I used an apple corer and inserted it about two-thirds of the way into the cupcake to remove some of the cake. The little pieces of cake you remove make a great snack!
  • When the cupcakes are hollowed out, fill a piping bag with the Italian meringue. I used Wilton tip 1M to pipe open rosettes on top of the cupcakes.
  • Use a kitchen torch to lightly toast the meringue rosettes. Work carefully and toast them gradually. It’s better to slowly bring them to the right color than to brown them too quickly.
  • Now fill the hollow center with lemon curd. I find it easiest to place the lemon curd in a piping bag as well – it makes filling the cupcakes much easier and neater.
