As with most scones recipes, this one is also pretty easy to make. First start by taking a large bowl and add self-rising flour together with salt and pepper. Add the butter into the flour and rub it with your finger tips until it resembles coarse crumbs.
Add the cheese, tomatoes, basil and the pine nuts to the flour mixture. Pour the milk in and mix it until you have a shaggy dough. Knead it gently with your hands until it comes together into a firm dough ball.
Flatten the dough into a round of around 3 cm or a little over an inch thick. This is best done on a lightly floured surface. Cut it into 8 wedges with a knife or a pastry cutter or – if you prefer – you can also use a round biscuit cutter to make round scones.
Place the scones on a baking tray lined with parchment paper and brush the tops lightly with a bit of milk.
Bake in the preheated oven at 425˚F/220˚C (conventional oven) until they are golden brown.
Serve them warm with a bit of butter or with some cream cheese.
These scones are really best served warm and straight from the oven. But you can store them outside of the fridge for a maximum of 1 day. Keep them in an airtight container and reheat them in the oven to crisp them back up.
Yes you can absolutely freeze these scones. Let them cool down completely before freezing and place them in a freezer safe container or freezer bags. Let them defrost slowly and reheat in either a toaster or in the oven.
