What Is Baklava?

Baklava is a crispy, sweet pastry made from many layers of buttery phyllo dough with a nut filling in between. Once baked, it’s drenched in a sweet syrup.

The dessert has its roots in Greece, Turkey, and other Middle Eastern countries, with each region offering its own variation.

For example, Turkish baklava is often made with pistachios and a sugar syrup without honey. Some versions are flavored with orange blossom water or rose water.

Making Baklava

With this recipe, you’ll make the most delicious homemade baklava: crispy layers of phyllo dough, a rich walnut filling, and a fragrant honey-lemon syrup that brings everything together.

This recipe is inspired by Greek baklava, which traditionally features walnuts, cinnamon, and honey. Keep reading for more variation ideas!

Building the Layers

Making baklava is all about layering. A good baklava can easily contain 20 to 30 layers of phyllo dough, sometimes even more.

Each sheet of phyllo is brushed with melted butter before adding the next layer. The butter is what creates those wonderfully crisp, flaky layers.

Every few layers you’ll add a generous layer of finely chopped nuts. Just remember: phyllo dough dries out very quickly, so always keep the unused sheets covered with a damp kitchen towel while you work.

Recipe Ingredients

  • phyllo dough – depending on the brand, the sheets can vary in size. You may want to trim them to fit your baking dish
  • walnuts – I use walnuts, but pistachios work wonderfully too, or use a combination of both
  • ground cinnamon
  • unsalted butter – melt it ahead of time and let it cool before using
  • honey
  • lemon – since you’ll use both the zest and juice, an organic lemon is recommended

Baking Tip: Since every sheet of phyllo gets brushed with melted butter, a good pastry brush is essential for making baklava.

How to Store Baklava

Baklava is best stored outside the refrigerator in a cool, dark place.

Stored in an airtight container, baklava will keep for up to one week at room temperature.

Can You Freeze Baklava?

Baklava freezes well, although I haven’t tested it myself. Stored airtight, it should keep for up to 3 months. Keep in mind that it may lose some of its crispness after thawing.

FAQ Homemade Baklava Recipe

Can I use pistachios instead?

Absolutely! Replace the walnuts with pistachios using the same amount. If you do, I’d recommend leaving out the cinnamon.

Can I combine different nuts?

Definitely. Walnuts and pistachios are a wonderful combination, and walnuts pair beautifully with pecans as well.

How do I add orange blossom water or rose water?

Stir it into the syrup after removing it from the heat.

Keep in mind that rose water is usually more potent than orange blossom water, so use it sparingly.

As a guideline:

  • ½-1 teaspoon rose water
  • 2-3 teaspoons orange blossom water

What baking dish should I use?

I used a 20 x 20 cm (8 x 8 inch) baking dish, but in hindsight I would choose a ceramic or glass baking dish instead of a non-stick baking pan.

Since you score the baklava before baking, you’ll be cutting directly against the surface of the dish. A ceramic or glass baking dish is therefore the better option.

Can I cut it after baking?

I wouldn’t recommend it. Once baked, the pastry becomes very crisp and fragile, making it difficult to cut into clean pieces.

Why isn't my baklava crispy?

There are several possible reasons:

  • Not enough butter between the layers
  • It wasn’t baked long enough
  • Too much syrup was added
  • The syrup contained too much liquid

Ingredients 

Baklava

  • 400 grams phyllo dough about 24 sheets, trimmed to fit
  • 250 grams walnuts
  • 2 tsp ground cinnamon optional
  • 175 grams unsalted butter melted and cooled

Honey Lemon Syrup

  • 100 grams granulated sugar
  • 1 lemon zest and juice
  • 90 ml water
  • 100 grams honey

Equipment

  • 1 20 x 20 cm (8 x 8 inch) square baking dish

Instructions

Prepare the Baklava

  • Thaw the phyllo dough in the refrigerator if frozen. Trim the sheets to fit your baking dish and keep them covered with a clean, damp kitchen towel while you work to prevent them from drying out.
  • Pulse the walnuts in a food processor until finely chopped. They should resemble coarse crumbs, not powder. Stir in the cinnamon.

Assemble the Baklava

  • Brush the baking dish with melted butter.
  • Place one sheet of phyllo in the dish and brush it lightly with butter. Repeat until you have 7 layers.
  • Sprinkle one-third of the walnut mixture evenly over the phyllo.
  • Add 5 more buttered sheets of phyllo.
  • Repeat with another one-third of the walnut mixture and another 5 buttered sheets.
  • Add the remaining walnut mixture and finish with the final 7 buttered sheets, brushing every layer with butter.
  • Score the baklava into squares or diamond shapes.
  • Bake in a preheated oven at 170°C/340°F (conventional oven) for 45–55 minutes, until golden brown.

Make the Syrup

  • While the baklava bakes, combine the sugar, lemon zest, lemon juice, water, and honey in a small saucepan.
  • Bring to a boil until the sugar has dissolved completely.
  • Reduce the heat and simmer for a few minutes until the syrup thickens slightly.

Finish

  • As soon as the baklava comes out of the oven, pour the syrup evenly over the top. Let it cool completely before serving. If desired, garnish with a few chopped walnuts.
Tips

Don’t throw away the phyllo scraps! Layer them in a small baking dish with beaten egg, cheese, and optionally some herb cream cheese, then bake alongside the baklava for a delicious savory snack.
How to store

Store baklava in an airtight container at room temperature for up to one week.
