I bake this easy french toast muffins recipe in a muffin form. It’s perfect for using up leftover brioche bread or regular stale bread (white or otherwise). Make sure to double check the exact ingredients in the recipe card below.
Start by greasing a muffin pan. You can also use muffin liners if you prefer. I didn’t use any and found they came out nicely.
Chop the bread into cubes. Divide the cubed bread into the pan and press it down firmly.
Take a small bowl and mix egg, milk, sugar and cinnamon together. Pour the mixture over the cups that are filled with the bread cubes. While the bread soaks you make the crumble.
Add butter, sugar and flour (and a little bit of salt) together and use your fingers to rub this into a crumbly mixture.
Sprinkle the streusel topping over the French toast mixture. Bake in a preheated oven at 180˚C/350˚F (conventional oven) for about 30 minutes until golden brown.
