How to Make Jan Hagel Cookies
Making the cookie dough is slightly different from other cookies. You start the same by creaming the butter and sugar together until light and fluffy.
Add the flour, baking powder, salt, cinnamon and half of the beaten egg. Mix this together until a firm dough forms.
Now line a baking sheet (approx. 16 x 10 inches or 40 x 25 cm) with parchment paper. Place the dough on the parchment paper and roll it out until it is almost the same size as the baking sheet but leave about 1 cm/ 1/2 inch of space around the edges. Trim it into a neat rectangle.
Transfer the paper with the dough onto the baking sheet and brush with the remaining egg. Sprinkle the pearl sugar and sliced almonds over the top and press it into the dough gently.
Bake for about 20 minutes or until golden brown.
Now as soon as it is out of the oven, immediately cut it into smaller cookies using a sharp knife. Let them rest on the baking sheet for a few minutes before transferring it into a wire rack to cool down completely.
