  • vanilla extract – for depth of flavor. You can make your own from scratch; it’s so easy!
  • self-rising flour – this is a mixture of flour with baking powder, in the ratio of 15 grams/0.5 oz. of baking powder per 500 grams/1.1 pounds of flour
  • lemon curd – provides irresistible tangy pockets of flavor throughout the cake
  • cream cheese frosting – make this by simply mixing together butter, cream cheese, vanilla, and powdered sugar

BAKING TIP: If you have a little more time, I recommend making your own lemon curd and definitely not skipping the homemade cream cheese frosting. The creamy frosting completes it perfectly and is so quick to make.
