Easy Asparagus Quiche Recipe

This delicious and easy asparagus quiche is made with green asparagus. While white asparagus, also known as ‘white gold’, is delicious, I tend to prefer the green ones. Nothing is better than fresh asparagus for me!

This is the perfect spring recipe, since green asparagus spears are at their best from April to June. It’s super easy to make and a great make-ahead meal, too. It’s vegetarian but bursting with flavor, and the combination of thyme, creamy filling, and melted cheese makes this a clear winner. It’s also pretty easy to customize to your liking.

Recipe Ingredients

  • quiche dough – I always use my own recipe for quiche dough because I think it tastes much better. Of course, you can also use store-bought puff pastry or pie crust
  • breadcrumbs – these help prevent a soggy crust
  • green asparagus – use the whole spears, but don’t forget to cut about ¾ inch (2 cm) off the woody ends
  • eggs – these bind the filling together. My recipes typically use medium eggs
  • crème fraîche – essential for a creamy quiche filling. Using a bit of heavy cream is also an option
  • fresh thyme – use only the leaves, not the stems
  • grated cheese – I used a mature Dutch cheese, but Parmesan, cheddar or a Swiss cheese would also work well. You can even use goat cheese if you like that

While this is a vegetarian quiche, it would also work really well if you added a bit of salmon to the mix or ham slices.

This green asparagus quiche stores well in both the refrigerator and the freezer. It’s ideal to prepare over the weekend if you have a busy week ahead.

How long does green asparagus quiche keep?

If you’re not serving the quiche immediately or don’t eat it all at once, you can store it in the refrigerator for 3-4 days. Make sure to wrap it airtight.

Can you freeze green asparagus quiche?

Yes, green asparagus quiche freezes perfectly. Wrap it tightly (you can also freeze individual slices) and it will keep for up to 3 months. Reheat it for about 15-20 minutes at 350°F/180°C (conventional oven).

FAQ Green Asparagus Quiche

Can I add salmon to the quiche?

Absolutely. For example, mix 100 grams (3.5 oz) of smoked salmon pieces into the filling.

Can I leave out the thyme?

You can, but you’ll miss an important flavor component. You could replace the thyme with dill, adding half to the filling and sprinkling the rest over the quiche when serving.

Can the quiche crust be replaced with puff pastry?

Absolutely. Simply swap the crust for puff pastry. Make it yourself with this puff pastry recipe or use store-bought.

Green Asparagus Quiche Recipe

A delicious recipe for a vegetarian green asparagus quiche, flavored with thyme and cheese.

Ingredients 

  • 1 quiche crust prepared according to recipe
  • 2-3 tbsp breadcrumbs
  • 500 grams green asparagus washed and woody ends removed
  • 4 eggs
  • 200 grams crème fraîche
  • Salt and pepper
  • 1 tbsp fresh thyme leaves
  • 150 grams grated cheese

Equipment

  • 9-10 inch quiche pan (24 cm)

Instructions

  • Prepare the dough according to the recipe. While it rests in the refrigerator, prepare the filling.
  • Blanch the cleaned green asparagus for a few minutes. Drain and let them dry well.
  • In a bowl, whisk together the eggs, crème fraîche, salt, and pepper. Strip the thyme leaves from the stems and mix them into the crème fraîche mixture. Set aside.
  • Roll out the dough and line the pan with it. Prick the bottom with a fork and sprinkle breadcrumbs over the base.
  • Arrange the asparagus in two layers, trying to place them as neatly next to each other as possible so each slice is generously filled with asparagus.
  • Pour the egg mixture over the asparagus and sprinkle the grated cheese on top.
  • Bake the quiche for 30-35 minutes at 400°F/200°C (conventional oven) until cooked through and golden brown.
  • Serve with a fresh salad or a bowl of soup, if desired.
How to store

If you don’t serve the quiche right away, it can be stored in the refrigerator for 3-4 days. Wrapped well (or stored per slice), it can be kept in the freezer for up to 3 months. Reheat for 15-20 minutes at 350°F/180°C (conventional oven).
