Why I Love This Recipe

Are you crazy about apple pie like me? Have you made my classic apple pie recipe many times? Then these apple pie cookies are perfect for you! It’s the original recipe, but with a twist.

Making apple pie cookies is just as easy as making the pie itself, but there are a few differences.

Apple pie cookies contain a lot more cookie than apple, which probably won’t surprise you. Personally, I really like that and I can never get enough of them.

Recipe Ingredients

  • Apples – It’s important to use firm, tart apples. I like HoneyCrisp, Braeburn or in The Netherlands JonaGold or Elstar.
  • Sugar – you can use white sugar or go for light brown sugar.
  • Self-rising flour – can also be replaced with regular all purpose flour plus baking powder. Check this article on how to replace self-rising flour with regular flour.
  • Cinnamon – for me apples and cinnamon are the perfect match!
  • Egg – the dough itself uses half an egg and you use the other half for egg wash.

How To Make Apple Pie Cookies

Now the fun part about making these apple pie cookies is that you can make them easily from leftover dough if you’ve made a traditional apple pie.

I’m never left with any dough but depending on the tin you’ve used you might have some leftover for making these mini apple pies. If not, it is super easy to make your own quickly. Just follow the steps below to make the dough.

Roll the dough

Once the dough is made, roll it out on a lightly floured surface. Ideally you want the dough to be roughly 0.15 inch or 4mm thickness. No need to start measuring but just use common sense here.

Using a round cookie cutter, cut out the circles. If you do not have a cookie cutter, you can first make cookie dough balls and flatten them with the rolling pin to be roughly the same size. You will need dough that is around 3 inches/8cm in diameter.

Apple filling

For the apple filling you cut the apple into small pieces. Mix it with the cinnamon sugar mixture and melt the butter in a medium saucepan. Add the apple mixture and let it caramelize a bit. Let it cool before you add it to the dough.

Place a tablespoon of your apple mix in the center of each cookie and make a simple lattice network to go over the filling. Brush with the remaining egg and bake in the oven for about 25 minutes until golden brown. Let them cool down on a wire rack.

Storing Apple Pie Cookies

You can store the cookies outside of the fridge at room temperature for 3-4 days in an airtight container. Or alternatively, freeze them for up to three months.

FAQ Baking Apple Pie Cookies

Which apples are best to use?

I prefer Granny Smith apples, Honey Crisp or Braeburn apples, but the most important thing is to use firm, tart apples. It also depends largely on where you live as I tend to find different apples here in The Netherlands than you would in the US.

How should you cut out the dough?

I’ve made these cookies with 8-cm (3 inch) and 9-cm (3.5 inch) baking rings. The size of the cutter determines how big your cookies will be and how many you can make with this recipe. I can tell you that these are quite large cookies.

Another option is to place a glass or small bowl with the same diameter on top of the dough and cut around it (or cut it with a knife). In my experience, this method doesn’t work as well or as neatly, but it is absolutely possible.

Can I replace the egg in the recipe?

Ideally, no, as this yields the best results. However, you can replace it with milk. Be careful not to make the dough too moist.

Apple Pie Cookies Recipe

The classic apple pie, but in cookie form. Perfect for those who love apple pie cookies!

Ingredients 

  • 1000 grams sweet-tart apples unpeeled
  • 75 grams fine granulated sugar
  • 2 teaspoons cinnamon
  • 200 grams unsalted butter plus an extra knob
  • 200 grams white caster sugar
  • 400 grams self-rising flour
  • 1 beaten egg
  • 8 grams vanilla sugar
  • pinch salt

Instructions

  • Peel the apples, remove the cores, and cut them into cubes. Mix with 75 grams of granulated sugar and cinnamon.
  • Heat a frying pan over medium heat, melt a knob of butter, and add the apple cubes. Cook for five minutes, stirring continuously. The sugar will caramelize and the apple pieces will soften. Turn off the heat and let the apples cool.
  • Knead 200 grams of butter, brown sugar, self-rising flour, half an egg, vanilla sugar, and a generous pinch of salt into a firm dough. I use the dough hooks on my stand mixer for this.
  • Dust your work surface with flour and roll out the dough to a thickness of about 4 mm. Cut out 12 slices with a round cookie cutter or baking ring (8–9 cm in diameter/ 3 inch). You will need the remaining dough later.
  • Place the slices on a baking sheet lined with parchment paper. Spoon a tablespoon of apples onto the center of each slice.
  • Roll out the remaining dough to a thickness of no more than 4 mm. 4 mm. Cut 5 mm-wide strips from the dough and place them crosswise on the circles with the apple mixture. I used six strips per cookie.
  • Press the ends together and brush the cookies with the remaining egg. Bake at 170°C/340℉ (conventional oven) for 25 minutes, or until golden brown.

Tips

  • When the cookies are ready to go into the oven, cut them out again with the round cookie cutter to remove any excess dough.
  • Once the cookies are golden brown, remove them from the oven and place the ring around them again. Turn and wiggle the ring around the still-warm cake to make it extra tight and round.
How to store

Apple pie cakes can be stored outside the refrigerator for two to three days or in an airtight container in the freezer for up to three months.
