Truffles come in all shapes and sizes. These chocolate chip cookie truffles are absolutely irresistible and you only need three ingredients to make them!
Add the cookies to a blender or food processor and pulse until finely ground.
Add the cream cheese and knead it into the cookie crumbs. Keep mixing until you get a firm dough or crumb mixture that holds its shape and isn’t too sticky.
Roll the mixture into small balls and refrigerate for 30-60 minutes (longer is fine).
Meanwhile, melt two-thirds of the chocolate. Once melted, add the remaining chocolate and stir until smooth.
When the chocolate is at the right temperature, remove the truffle balls from the fridge. Dip them one by one into the chocolate.
Place them on a sheet of parchment paper and immediately sprinkle with any leftover cookie crumbs.
