Oreo Nutella Muffins

Who doesn't love Oreos and Nutella? Put these two together and you've got a match made in heaven. That's exactly why these Oreo Nutella Muffins are so irresistible!

Ingredients 

  • 120 g granulated sugar
  • 300 g all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • Pinch of salt
  • Zest of 1 lemon
  • 2 large eggs
  • 250 ml milk
  • 120 ml vegetable oil
  • 2 teaspoons vanilla extract
  • 8 Oreo cookies roughly broken into pieces
  • 4 additional Oreo cookies broken into pieces for topping
  • About 1 teaspoon Nutella per muffin

Instructions

  • Preheat the oven to 400°F/200°C (conventional oven) and line a 12-cup muffin pan with paper liners.
  • In a large bowl, whisk together the sugar, flour, baking powder, baking soda, salt, and lemon zest.
  • In a separate bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract until well combined.
  • Pour the wet ingredients into the dry ingredients and gently fold everything together with a spatula. The batter doesn't have to be perfectly smooth; a few lumps are completely fine.
  • Fold the 8 broken Oreo cookies into the batter.
  • Divide the batter evenly among the muffin cups using an ice cream scoop or large cookie scoop. Fill each liner almost to the top, leaving about ¼ inch (½ cm) of space below the rim. Muffins rise beautifully when the cups are generously filled.
  • Sprinkle the remaining Oreo pieces over the tops of the muffins. Then spoon about 1 teaspoon of Nutella onto the center of each muffin. There's no need to cover the Nutella with additional batter.
  • Bake for 20 minutes, or until the muffins are golden brown and a toothpick inserted into the cake portion comes out clean.
  • Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
Tips
Don't worry if the Nutella sinks while baking. That can happen, and it's completely normal. In some muffins the Nutella ends up near the bottom, in others it stays in the center, and sometimes part of it remains on top. They all taste just as delicious!
How to store
Store the muffins in an airtight container at room temperature for 3-4 days.
