Meringue Cookies Recipe

This foolproof meringue cookies recipe comes with plenty of helpful tips to ensure perfect results every time. Plus, you'll find lots of fun ideas for piping different meringue shapes!

Ingredients 

  • 4 egg whites
  • 125 grams granulated sugar
  • 125 grams powdered sugar sifted
  • 10 grams cornstarch

Prep

  • Before you begin, make sure all of your equipment is completely grease-free by wiping it with lemon juice. This includes your mixing bowl, spatula, whisk, small bowls, and even your hands. Even the smallest amount of grease can prevent the egg whites from whipping properly.

Method

  • Place the egg whites and granulated sugar in a mixing bowl. Beat until stiff peaks form. Using a stand mixer, this usually takes about 4-5 minutes. I don't use the highest speed, and the exact mixing time may vary depending on your mixer and the amount of meringue you're making.
  • When you lift the whisk, the peaks should stand up firmly. It's perfectly fine if the very tip curls over slightly. To double-check that the meringue is ready, carefully turn the bowl upside down over your head. If the meringue stays in place, it has been whipped correctly.
  • Add the sifted powdered sugar and cornstarch. Gently fold them into the meringue using a spatula. Be careful not to overmix, but don't fold too slowly either. A quick and effective technique is to fold in a figure-eight motion until everything is just combined.
  • Your meringue is now ready!
  • You can leave it bright white or color it with food coloring if you'd like. (See the tips above for the best way to color meringue.)
  • Transfer the meringue to a piping bag fitted with your preferred piping tip and pipe any shapes you like. Meringues hold their shape very well during baking, so you can pipe them fairly close together on the baking sheet.
  • Bake in a preheated oven at 100 °C / 212 °F (conventional oven). Small meringue kisses will take about 1 hour, while larger shapes may need up to 2 hours.

Tips

  • Smaller-sized French meringues require about an hour of baking while larger sizes can need up to 2 hours. Adjust your baking time accordingly. 
  • Do not store meringues in the fridge or freezer due to the moisture!
  • Looking for ideas to use the leftover egg yolks? Save them for custards, pastry cream, lemon curd, homemade ice cream, or rich pasta dough.
How to store
Store the meringue cookies in an airtight container like a cardboard cake box in a cool, dry place for 1–2 weeks. I often keep mine in a container inside the (turned off) oven, where they stay dry and crisp.
