Make half a batch of gingerbread cookies. Cut out various shapes with a small knife to form the melted snowman look. To make things easier, you can also just cut out round circles. Bake the cookies according to the recipe and let them cool on a wire rack.
Melt ⅔ of the white chocolate over a double boiler, then add the remaining chocolate and stir until fully melted. If the chocolate starts to harden again, warm it gently while stirring over the double boiler.
Cut the marshmallows in half so they’re half as tall. Use a tiny dab of melted chocolate to stick the marshmallow onto each cookie. Spread white chocolate over the marshmallow and cookie, then add confetti where the “buttons” should be, and decorate the edges with mini pearls and snowflake sprinkles.
Let the chocolate set in a cool, dry place until firm enough to draw on with a chocolate pen. Draw the snowman’s face and arms. Your cookies are ready!
