Start by making the crust. Finely crush the kruidnoten. Melt the butter and stir the two together until you have a crumbly, sticky mixture. Transfer it to a springform pan lined with parchment paper and firmly press the crumbs into an even layer.
Next, make the cheesecake filling. Beat the cream cheese and sugar in a bowl until creamy. Add the eggs one at a time, mixing until each one is incorporated. Add the sour cream and vanilla extract and mix until smooth. Fold in the flour and speculaas spice blend, then fold in the kruidnoten.
Pour the filling over the kruidnoten crust and spread it out evenly. Place the cheesecake in the oven.
Bake the kruidnoten cheesecake for 60 minutes at 300°F /150°C (conventional oven). Turn off the oven, leave the oven door slightly ajar, and let the cheesecake cool inside.
Once the cheesecake is no more than slightly warm, cover it with plastic wrap and refrigerate overnight to finish setting.
The next day, add the toppings just before serving. If you refrigerate the cheesecake with the kruidnoten already on top, they will absorb moisture and become soft.
Tips
You can replace the kruidnoten with speculaas cookies to make a delicious speculaas cheesecake instead.
How to store
Store the cheesecake in the refrigerator for 3–4 days. Keep in mind that the kruidnoten on top will soften over time, so it’s best to add them just before serving. You can freeze the cheesecake without the toppings for up to 3 months.
