Honeycomb Clusters

If you're familiar with the Cadbury Crunchie bar, you'll already have an idea of what these Honeycomb Clusters taste like. They're a delicious way to enjoy homemade honeycomb.

Ingredients 

  • 50 grams honeycomb prepared according to the recipe
  • 200 grams white chocolate

Instructions

  • Prepare the honeycomb according to the recipe and allow it to harden completely.
  • Melt two-thirds of the chocolate in a heatproof bowl set over a saucepan of gently simmering water (double boiler method).
  • Remove from the heat and add the remaining chocolate. Stir until fully melted.
  • Let the chocolate cool, stirring occasionally, until it feels cool when tested against the inside of your lower lip.
  • Break the honeycomb into small pieces and fold it into the chocolate.
  • Line a cutting board or baking sheet with parchment paper and spoon the honeycomb mixture into 12 clusters.
  • Allow the chocolate to cool and set completely before serving.
Tips
Don't make your honeycomb on humid days as it absorbs moisture very easily and won’t be crisp.
How to store
Store in an airtight container for at least 2 weeks.
