Healthy Oatmeal Banana Bread Recipe

Ingredients 

  • 225 grams rolled oats or oat flour
  • 3 ripe bananas about 300–350 g/8-10 oz
  • 3 eggs
  • 1 tsp vanilla extract
  • 1½ tsp baking powder
  • 1 tsp baking soda
  • Pinch of salt
  • 80 grams raisins soaked

  • 25 cm (10-inch) loaf pan

Instructions

  • If using rolled oats, grind them into a fine flour using a blender or food processor.
  • Mash the bananas until smooth. Add the eggs one at a time, along with the vanilla extract, mixing well after each addition until fully incorporated.
  • Add the oat flour, baking powder, baking soda, and salt. Mix until everything is well combined. Fold in the soaked raisins.
  • Pour the batter into a greased and lightly floured loaf pan (or one lined with parchment paper). Spread the batter evenly.
  • If you'd like, slice an extra banana lengthwise and place it on top of the batter, or sprinkle a handful of rolled oats over the top for decoration.
  • Bake at 180°C/356°F (conventional oven) for 40-45 minutes, or until golden brown and a wooden skewer inserted into the center comes out clean.
Tips
For extra flavor, stir 2 tsp speculaas spice blend (Dutch mixed spice) or 1 tbsp ground cinnamon into the batter along with the dry ingredients.
How to store
Store covered at room temperature for 2-3 days, or freeze for up to 3 months. For easy grab-and-go snacks, slice the banana bread before freezing and wrap or freeze the slices individually. This way you'll always have a delicious snack ready to take with you.
