Instructions
Trim the tops and bottoms off the figs and discard. Cut the figs into pieces and place them in a large pot. Add the jam sugar and lemon juice.
Bring the mixture to a boil over medium heat, stirring regularly. Once it starts boiling, reduce the heat slightly and let it simmer for about 10 minutes, until the figs are soft.
Mash the jam with a potato masher for a chunky texture, or blend it smooth with an immersion blender.
Ladle the hot jam into the jars and seal immediately. Turn the jars upside down to create a vacuum seal.
Let the jars sit upside down for about 5 minutes, then turn them upright and allow the jam to cool completely.
Tips
Once cooled, clean the jars and label them with the date.
If replacing the jam sugar with regular granulated sugar and pectin, use 2,5 cups/500 gram of sugar and one packet of powdered pectin (like Sure-Jell)
How to store
Store the jars in a cool, dry place. Once opened, keep in the refrigerator. Properly sealed jars will last up to one year.
