Duchess Potatoes

These pretty little duchess potatoes are always a holiday favorite. This recipe for homemade pommes duchesse is easy to make and tastes wonderful.

Ingredients 

  • 500 grams starchy potatoes peeled
  • 1 egg yolk
  • 50 grams unsalted butter
  • Salt pepper, and nutmeg to taste

  • Potato masher or potato ricer

Instructions

  • Boil the potatoes in salted water until tender. Drain and return to the pot. Mash until completely smooth.
  • Add the egg yolk and butter and stir through the potatoes. Season with salt, pepper, and nutmeg. The mixture should be smooth and creamy.
  • Transfer the mash to a piping bag fitted with a star tip (Wilton 1M) and pipe swirls onto a baking sheet lined with parchment paper.
  • Bake for about 25 minutes at 375°F/190°C (conventional oven) until golden.
  • Sprinkle with a little chopped parsley before serving, if you like.
Tips
You can swap the nutmeg for another ground spice you enjoy in mashed potatoes.
