Duchess Potatoes
These pretty little duchess potatoes are always a holiday favorite. This recipe for homemade pommes duchesse is easy to make and tastes wonderful.

starchy potatoes
peeled

egg yolk

unsalted butter
Salt
pepper, and nutmeg to taste

Instructions
Boil the potatoes in salted water until tender. Drain and return to the pot. Mash until completely smooth.
Add the egg yolk and butter and stir through the potatoes. Season with salt, pepper, and nutmeg. The mixture should be smooth and creamy.
Transfer the mash to a piping bag fitted with a star tip (Wilton 1M) and pipe swirls onto a baking sheet lined with parchment paper.
Bake for about 25 minutes at 375°F/190°C (conventional oven) until golden.
Sprinkle with a little chopped parsley before serving, if you like.
Tips
You can swap the nutmeg for another ground spice you enjoy in mashed potatoes.
