Dinosaur Footprint Cookies

These fun cookies with dinosaur footprints are such fun to make! They were a huge hit in our house.

Ingredients 

  • 250 grams unsalted butter softened
  • 100 grams powdered sugar
  • 1 tbsp lemon zest
  • 300 grams all-purpose flour
  • Cocoa powder for decorating

Instructions

  • Place the butter and powdered sugar in a bowl and beat for a few minutes until light and creamy.
  • Add the lemon zest and flour, then mix until a firm dough forms.
  • Shape the dough into a log about 2½ inches (6 cm) in diameter. Wrap it tightly in plastic wrap and chill for at least 1 hour.
  • Slice the chilled dough into rounds about ⅓ inch (8 mm) thick and place them on a baking sheet lined with parchment paper.
  • Wash your toy dinosaurs thoroughly with warm, soapy water, then dry them well.
  • Firmly press the dinosaurs’ feet into each cookie. They don’t have to be perfect, and it’s okay if the cookies lose their shape a little.
  • Bake for about 14 minutes at 350°F /175°C (conventional oven) until the edges are lightly golden.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  • Once cooled, place a little cocoa powder in a small bowl. Using a pastry brush or small paintbrush, lightly dust the cocoa powder over the cookies and into the footprints to make the prints stand out.
Tips
If the footprints fade during baking, gently press the dinosaur feet into the cookies again immediately after they come out of the oven while they’re still soft. Be careful, as both the cookies and the baking sheet will be very hot!
How to store
Store the cookies in an airtight cookie tin or container for up to 4 weeks.
