Coffee Crumble Cake

This cake is guaranteed to delight every coffee lover! A soft, moist coffee cake topped with a golden crumble for the coziest treat.

Ingredients 

Cake batter

  • 100 grams unsalted butter
  • 100 grams granulated sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • 100 grams self-rising flour
  • pinch of salt
  • 1 1/2 tsp instant coffee powder

Crumb topping

  • 60 grams unsalted butter
  • 80 grams granulated sugar
  • 80 grams all-purpose flour
  • pinch of salt
  • 1 tsp instant coffee powder

Equipment

  • 8 x 8 inch (20 x 20 cm) square pan

Instructions

  • Cream the butter and sugar together until light and fluffy. Add the eggs and vanilla extract and mix until fully incorporated.
  • Add the self-rising flour, salt, and instant coffee powder. Mix until combined.
  • Pour the batter into a parchment-lined baking pan and spread it evenly.
  • For the crumb topping, combine all ingredients in a bowl and use your hands to work it into a crumbly dough. Sprinkle the crumbs over the batter.
  • Bake for about 25 minutes at 320°F/160°C (conventional oven) until cooked through and golden brown.
How to store
Store well covered at room temperature for 4-5 days. You can also freeze this cake for up to 3 months and thaw before serving.
