Instructions
Cream the butter and sugar together until light and fluffy. Add the eggs and vanilla extract and mix until fully incorporated.
Add the self-rising flour, salt, and instant coffee powder. Mix until combined.
Pour the batter into a parchment-lined baking pan and spread it evenly.
For the crumb topping, combine all ingredients in a bowl and use your hands to work it into a crumbly dough. Sprinkle the crumbs over the batter.
Bake for about 25 minutes at 320°F/160°C (conventional oven) until cooked through and golden brown.
How to store
Store well covered at room temperature for 4-5 days. You can also freeze this cake for up to 3 months and thaw before serving.
