Caramel Cookie Clusters

These incredibly delicious cookie caramel clusters are made with just three ingredients: chocolate, Dutch spiced mini cookies (schuddebuikjes), and soft caramel fudge pieces.

Ingredients 

  • 300 grams chocolate milk or dark
  • 100 grams schuddebuikjes Dutch spiced mini cookies
  • 150 grams soft caramel fudge cut into small cubes

Instructions

  • Place two-thirds of the chocolate in a heatproof bowl and melt it over a double boiler.
  • Once the chocolate has completely melted, remove the bowl from the heat and add the remaining chocolate. Stir until it has fully melted.
  • Let the chocolate cool until it feels cool to the touch. Add the schuddebuikjes and the caramel fudge pieces, then stir until everything is evenly coated.
  • Spoon small mounds of the mixture onto a baking sheet lined with parchment paper. Let the chocolate set completely in a cool place.
Tips
These cookie caramel clusters are perfect with a cup of coffee or tea, but they also make a wonderful homemade gift. Simply package them in a decorative cellophane bag.
How to store
Store in an airtight container in a cool, dry place for at least 2 weeks.
