An easy banana cake recipe made with butter, sugar, and flour, because baking doesn’t always have to be healthy. It does, however, have to be incredibly delicious!
In a mixing bowl, beat the butter and sugar for several minutes until creamy. Add the eggs one at a time, mixing until smooth after each addition.
Purée the bananas with an immersion blender. Add the banana purée and vanilla extract to the batter and mix until well combined.
In a separate bowl, combine all the dry ingredients: flour, baking powder, cinnamon, and salt. Gradually add the dry ingredients to the batter. Continue mixing until you have a smooth batter.
Pour the batter into a greased and floured loaf pan, or line the pan with parchment paper. If you like, slice an extra banana lengthwise and arrange the slices on top of the cake for decoration.
Bake the cake for 60 minutes at 175°C/350°F (conventional oven). Test the center with a cake tester to make sure it’s fully baked. If needed, return it to the oven for a little longer.
After baking, turn the banana cake out onto a wire rack and let it cool completely.
Tips
You can also use this batter to make 12 banana cupcakes. Bake them for about 20 minutes.
