Plum Pie with Puff Pastry Recipe

This plum tart/plum pie with puff pastry recipe is easy to make and absolutely delicious!

Ingredients 

  • 1 recipe for pastry cream
  • 1 roll of fresh puff pastry
  • 1 egg yolk
  • 750 grams of plums
  • 3 tablespoons sugar

Equipment

  • Rectangular baking sheet, at least 30 x 17.5 cm. (12 x 7 inch)

Instructions

  • Roll out the fresh puff pastry on a baking sheet lined with parchment paper. Use a sharp knife to cut a 1.5 cm/0.5 inch border around the edges without cutting all the way through the pastry. Prick the pastry within the border to prevent it from rising.
  • Brush the edges with beaten egg yolk and sprinkle with sugar for extra crispiness. Bake at 200°C/400˚F (conventional oven) for 20 minutes until golden brown.
  • Meanwhile, halve the plums, remove the pits, and cut each half into four to six pieces, depending on the size of the plums. In a mixing bowl, combine the plums and sugar until they are fully coated. Place the plums in a large baking dish and bake for 10 minutes in the oven on the same temperature once the crust is ready.
  • Allow the base and plums to cool completely before assembling the tart.
  • Spread the pastry cream over the puff pastry base, keeping the edges free, and spoon the plums on top.
Tips
If the plums are not ripe, bake them for an additional 5 minutes.
