Pistachio Paste Recipe

Making your own pistachio paste is super easy! With this simple recipe, you'll never want to buy the store-bought version again!

  • 400 grams pistachios

Instructions

  • Roast the pistachios for 9-10 minutes at 150 degrees/300˚F with conventional oven.
  • Allow the nuts to cool completely before continuing.
  • Blend the nuts in a powerful food processor until smooth. This process takes about 10 minutes. Store in a clean jar.
Tips
Roasting the nuts adds flavor to the nut paste but also releases the natural oils. Therefore, make sure you always buy unroasted nuts and roast them yourself. "Roasted" nuts are usually fried, which does not have the same effect.
If you have blanched and skinned your pistachios, roast them for an additional 5-10 minutes in the oven.
How to store
Store the pistachio paste in a clean, airtight container in the refrigerator for up to two weeks. If stored in an airtight container, the paste can be kept in the freezer for up to three months.
