Greek Yogurt popsicles with Mango

Delicious Greek Yogurt popsicles with Mango that is very popular with both children and adults!

Ingredients 

  • 100 grams ripe mango
  • 2 tbsp lemon juice
  • 200 ml Greek yogurt 10%
  • 1-2 tsp honey to taste
  • 0.5 tsp vanilla extract

  • 6 popsicle molds

Instructions

  • Cut the mango into small cubes (or mash it finely, but this only works with very ripe mango). Mix with the lemon juice and 40 ml water in a saucepan. Heat for 5-10 minutes, stirring constantly. The mango will soften and the mixture will thicken. Remove from heat and allow to cool. Puree with an immersion blender.
  • Stir the honey and vanilla extract into the yogurt. Fill the popsicle molds by alternating two teaspoons of the yogurt mixture with one teaspoon of the mango mixture.
  • When they are completely filled (to the brim), swirl a skewer (or the back of a spoon) to create a nice pattern, mixing the fillings a little.
  • Place the popsicle molds in the freezer for at least 4 hours.
Tips
Feel free to substitute another fruit for the mango, but keep in mind that not all fruits are as sweet as mango.
How to store
Popsicles can be stored in the freezer for up to three months.
