Strawberry peach cobbler

This strawberry peach cobbler never stays on the counter for very long. That's how incredibly delicious this dessert is. With very little effort you can serve a delicious dessert that is also great for breakfast, lunch or as a snack.

Ingredients 

  • 200 grams strawberries
  • 5 peaches
  • 2 tbsp custard powder

For the cobbler

  • 75 grams unsalted butter
  • 150 grams caster sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 120 grams self-rising flour

Equipment

  • Baking dish 23 x 16 cm/ 9 x 6 inch

Instructions

  • Halve the strawberries, cut the peaches into small pieces and stir in the custard powder. Pour into the bottom of a 23 x 16 cm/9 x 6 inch baking dish.
  • Whisk the butter and sugar until light and fluffy, then add the egg and vanilla. Whisk until combined. Add the self-raising flour and mix briefly until incorporated.
  • Pour the mixture over the fruit and smooth down.
  • Bake in a pre-heated oven at 200°C/390˚F (conventional oven) for 30-35 minutes until golden brown. Test for doneness with a skewer.
Tips
Serve with a scoop of ice cream or a dollop of whipped cream.
How to store
Cover and refrigerate for 3-4 days.
