Servings: 16 bars

Ingredients

Cookie

  • 80 grams caster sugar
  • 160 grams unsalted butter
  • 0.5 egg
  • 225 grams flour
  • 1 pinch salt

Caramel

  • 1 can condensed milk 397 grams
  • 60 grams unsalted butter
  • 60 grams dark brown sugar

Other ingredients

  • 350 grams milk chocolate

Equipment

  • 20 x 20 cm square pan (8 x 8 inch)

Instructions

Cookie base

  • Place the granulated sugar, butter and egg in a bowl and whisk for a few minutes until fluffy.
  • Add the flour and salt and knead with a mixer until you have a firm dough.
  • Line a baking sheet with baking paper. Press the dough firmly into the bottom of the pan. Prick the dough with a fork.
  • Bake at 180˚C/350˚F (conventional oven) for about 25 minutes or until golden brown. Allow the cookie base to cool in the pan.

Caramel layer

  • When the cake is cooled, make the caramel. Be careful: it will be very hot! Combine the condensed milk, butter and dark brown sugar in a saucepan.
  • Add butter and sugar. Melt the butter and sugar over low to medium heat, stirring constantly.
  • When the caramel begins to boil, keep stirring continuously. You can also lower the heat a bit. It will begin to thicken a little at a time. Continue stirring until the caramel is about as thick as a soft chocolate spread.
  • Pour the caramel over the cake and spread with a spatula. Let cool completely in the refrigerator.
  • Remove the large cookie and caramel base from the pan. Using a sharp knife, cut the cookie in half, then cut each half into 8 strips.

Chocolate dipping

  • Melt two-thirds of the milk chocolate in a double boiler. When melted, remove the bowl from the pan and add the remaining chocolate. Stir until all is melted.
  • When the chocolate is at the right temperature, dip all the caramel cookie strips in the chocolate. Place them on a sheet of parchment paper.
  • While the chocolate is still a little soft, you can press the Twix with the flat side of the prongs of your fork a few times to create a pattern in the chocolate, just like you would expect from a Twix.
  • Allow the chocolate on the Twix bars to harden completely.
Tips
Making a large Twix cake? Don't cut the cake into strips and use only 200 grams (7 oz) of chocolate. Pour all of this on top instead of dipping the bars. You can also make a round cake by using a Ø22 cm/8.5 inch baking pan or the "Convert Recipe" button.
How to store
In a cookie jar. Eat within 1-2 weeks, then they are at their best. They keep up to 3 months in the freezer.
