Spread the sweet potato fries in a single layer on a baking sheet lined with parchment paper. Bake at 220°C/430˚F (conventional oven) for 25 minutes or until tender and golden brown. Shake the fries well in between.
Tear the mozzarella into pieces. Spread over the fresh fries along with the pepperoni slices. Garnish with grated Parmesan and return the baking sheet to the oven for 5 minutes.
Remove the fries from the oven and sprinkle with a little salt and pepper. Pour some of the tomato sauce over the fries and serve the rest in a bowl next to the fries.
Slice the olives and chop the basil. Sprinkle over the fries and serve immediately!

Don't store the loaded sweet potato fries but serve them fresh from the oven for the best taste!
