Carrot Cake Banana Bread

A banana bread combined with a carrot cake. This can only be super delicious!

Ingredients 

  • 3 ripe bananas about 300 grams/10.5 oz
  • 3 eggs beaten
  • 1 tsp vanilla extract
  • 100 grams almond flour
  • 150 grams all purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • Pinch of salt
  • 1.5 tsp cinnamon
  • 0.75 tsp nutmeg
  • 0.5 tsp ginger
  • 0.5 tsp cloves
  • 75 grams finely chopped walnuts
  • 75 grams grated carrot

  • Mash the bananas to a puree. Add the eggs one by one, along with the vanilla extract.
  • Add the almond flour, flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger and cloves. Mix into the dough until completely incorporated.
  • Fold the walnuts and carrot into the batter and pour into a greased and floured cake pan.
  • Bake the Carrot Cake Banana Bread for 45-50 minutes at 180°C/350˚F(conventional oven) until done. A wooden skewer should come out clean.
Tips
Slice the bread and freeze each slice. This way you always have a tasty snack on hand.
How to store
Keep covered for 2-3 days or in the freezer for 3 months.
