Pretzel Bites

These pretzel bites are a delicious salty snack for any time of day. The only “danger” is that you’ll want to keep eating them one after another!

Ingredients 

Dough

  • 200 grams all-purpose flour
  • 4 grams active dry yeast
  • ½ tsp granulated sugar
  • 1 tsp baking powder
  • ½ tsp salt
  • 65 ml milk lukewarm (whole or low-fat, both work)
  • 60 ml water lukewarm

Topping

  • 1 egg yolk medium
  • coarse sea salt

Instructions

  • Start by making the dough. Combine the flour, yeast, sugar, baking powder, and salt in a bowl. Warm the milk and water until lukewarm, then add them to the dry ingredients.
  • Knead the dough for 8-10 minutes until smooth and elastic. Let it rise for 45-60 minutes, until doubled in size.
  • After rising, turn the dough out onto your work surface. Press out the air and divide it into 4 equal pieces. Cover the pieces with a clean towel or plastic wrap, and roll out one piece at a time into a long rope, about 45-50 cm long.
  • Cut the rope into small bites using a knife or dough scraper, each rope gives you about 15 bites.
  • Place all the pieces on a baking sheet lined with parchment paper. Brush with egg yolk and sprinkle with coarse sea salt. Let them rise again for 10-15 minutes (no need to cover).
  • Bake at 225 °C (440 °F), top and bottom heat, for about 10 minutes until golden brown.
  • These pretzel bites are amazing both warm and cooled. Put out a bowl and it’ll be gone in no time. They’re also great served with dips.
Tips
Shortcut: Want to warm your milk and water faster? Instead of using a saucepan, just add very hot water to your cold milk.
How to store
Keep in a bag or container for 2-3 days. They also freeze well, up to 3 months.
