Speculaas Banana Bread

A banana bread with warm speculaas spice flavor. Perfect for fall.

Ingredients 

  • 3 ripe bananas about 300-350 grams
  • 3 eggs
  • 1 tsp vanilla extract
  • 100 grams almond flour
  • 150 grams all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp speculaas spice mix or pumpkin pie spice as a substitute
  • Pinch of salt
  • 80 grams speculaas/gingerbread cookies or Dutch pepernoten

Equipment

  • 10-inch loaf pan

Instructions

  • Mash the bananas until smooth. Add the eggs one at a time along with the vanilla extract and mix well.
  • Add the almond flour, all-purpose flour, baking powder, baking soda, speculaas spices, and salt. Mix until fully combined.
  • Fold in the speculaas bits and pour the batter into a greased and floured loaf tin. Smooth the top and sprinkle a few extra speculaas bits on top.
  • Bake the speculaas banana bread for 40 minutes at 180˚C/ 350°F (conventional oven). A wooden skewer should come out clean when it's done.
Tips
Slice the banana bread and freeze the slices individually so you always have a quick snack ready to grab.
How to store
Store outside of the fridge for 4-5 days or freeze in slices for up to three months.
