Apple Oatmeal Cookies

Sweet, fruity, crisp on the outside, and soft on the inside. That’s exactly how these apple oatmeal cookies should taste. Absolutely delicious with coffee or tea!

Servings: 6 large cookies (or 12 normal cookies)

Ingredients 

  • 30 grams unsalted butter
  • 50 grams granulated sugar
  • 50 grams light brown sugar
  • 1 medium egg
  • 125 grams all-purpose flour
  • 65 grams rolled oats
  • 1 tsp baking powder
  • 1 tsp speculaas spice mix pumpkin pie spice works too
  • pinch of salt
  • 1 apple
  • 1 tbsp cinnamon sugar

Instructions

  • Beat the butter and both sugars together until combined. Add the egg and mix until smooth.
  • Add the flour, oats, baking powder, speculaas spice, and salt. Mix until a dough forms.
  • Peel the apple and cut it into small cubes. Place in a small bowl, add the cinnamon sugar, and stir to coat. Fold the apple pieces into the dough until evenly distributed.
  • Shape the dough into six balls — slightly wet hands help — and place them on a baking sheet lined with parchment paper. Press them down gently.
  • Bake the apple oatmeal cookies for about 20 minutes at 190°C/370˚F (conventional oven) or until golden brown.
Tips
Prefer smaller cookies? Make 12 instead. Dice the apple extra fine (or coarsely grate it) and bake for about 15 minutes until golden brown.
How to store
Keep in an airtight container for up to 1 week. They also freeze well for up to 3 months.
