The US has gingerbread and pumpkin spice mix. The Netherlands has speculaas spice mix! It’s a bit similar to both, but also different. We use it to make speculaas cookies, but it can also be used in cakes and many other recipes. I use this mix A LOT during fall and winter.

Happy birthday to me! 🥳🎂 I turned 33 today! So I made this vanilla cake with toffee flavored chocolate and caramel pieces to bring with me to my pottery class today. Everyone enjoyed it very much 🥰

I celebrated with my family yesterday with a nice brunch and I’m making a large lasagna for tonight’s bday dinner. It’s all about food right 😅.

RECIPE🌸 Are you familiar with the Dutch ‘choc

RECIPE🌸 Are you familiar with the Dutch ‘chocoladerotsjes’? It translates to chocolate rocks (but are better known as chocolate clusters) and the most famous one is a mixture of milk chocolate and peanuts. I made a new flavor myself with pink ruby chocolate. The perfect treat when seeing the Barbie movie 😉🎟️.

INGREDIENTS
200 grams of ruby chocolate
50 grams of Speculoos/Biscoff cookies, finely chopped
Handful of freeze-dried strawberries and raspberries

DIRECTIONS
Melt the chocolate and mix in the cookies and freeze-dried fruit. Stir well. Use a spoon to place about 12 ‘rotsjes’ on parchment paper. Let the chocolate set.

That’s it! Enjoy!

PEACH LEMONADE 🍑🍹A perfect summer recipe if you ask me. I’ll share my recipe so you can make your own peach lemonade at home. Enjoy!

INGREDIENTS

500 grams canned or fresh peaches, peeled and sliced
150 ml water
150 grams of fine granulated sugar
150 ml lemon juice (about 5-6 lemons)
750 ml ice cold water

DIRECTIONS

- Blend the peaches until smooth.
- Make sugar syrup by bringing water and sugar to a boil in a saucepan. Stir occasionally. Remove the pan from the heat once the water is completely clear in color.
- In a large pitcher, put the sugar syrup with the lemon juice and the mashed peach. Stir to combine. Add the ice-cold water and stir again.
- Place in the refrigerator until the peach lemonade has cooled completely. Serve with ice cubes.

3 ingredient peanut butter cookies 🥜🍪 Can you make cookies with only 3 ingredients? Yes you can! I’ll share my recipe for delicious peanut butter cookies. I like to use crunchy peanut butter 😋

INGREDIENTS (for 16 cookies)
- 250 grams of peanut butter
- 200 grams of granulated sugar
- 1 egg

DIRECTIONS
- Add all ingredients in a bowl and mix until combined
- Make 16 cookies en flatten with a fork
- Bake 10-12 minutes on 180C/350F (conventional)

BAKING TIP! I use this little trick for a few years now, it’s so helpful that I’d like to share it with you: Grease your (measuring) spoon with oil before scooping honey from the jar, that way nothing will stick to your spoon 🙌🏻. So when I make granola, I measure out the oil first and then the honey. Works for other sticky ingredients too!
